High Protein Pasta

I am always on the lookout for high protein, low calorie meals. I have found it very hard to get enough protein in my diet since I am not a huge meat fan. I had an idea to get more protein out of vegiterian pasta and I just tried it out tonight. I loved it!!! I tried the Barilla Plus pasta that was mentioned in an earlier post. It was super good! Plus, I just added a scoop of cottage cheese to my pasta and mixed it all together. Mmmm... good!

1/2 c. Newmans Own Marinara Sauce (All Natural)
2 oz. Barilla Plus Angel Hair Pasta
1/4 c. Chopped red, green, and yellow peppers
1/2 c. Steamed Squash
1/2 c. Steamed Brocolli
1/2 c. Low Fat Cottage Cheese


NUTRITIONAL INFORMATION: 383 Calories, 4 grams Fat, 59 Carbs, 28 grams Protein

Barilla spaghetti with cherry tomatoes and basil...by Lynne

I (Rachel) am submitting this recipe that Lynne just put up on her blog. You have NOOOOO idea what a major breakthrough this is for her:

"So Andy and I watched a show with Dr. Memmett Oz and lets just say that Andy and I are very motivated to eat healthier. It was a real eye opener. My motto on cooking has changed, it is no longer "the more processed the better." It will take more work but we owe it to our Maker who gave us these wonderful bodies."

We tried this qualifying recipe last night and it was a hit with all of us.

1 box 'Barilla' thin spaghetti*
2 Tbs olive oil
1 clove garlic
2 cups cherry tomatoes(halved)
salt/pepper
1 Tbs fresh basil, chopped
1/2 c. shredded parmesean

Cook pasta, meanwhile, heat olive oil and garlic in a large skillet until garlic is golden. Add cherry tomatoes, salt, pepper. Cook for 2 minutes. Drain pasta and add to skillet mixture. Add basil and toss over med heat for 1 minute. sprinkle cheese over each serving.

* This pasta is highly recommended. It's whole grain, has tons of protein, lots of fiber and even omega 3's. Click on the picture for more info.
