Conference Quiche Tip:
If you choose to add spinach or mushrooms, etc. make sure that the spinach is frozen, chopped, and that it is thawed completely, at room temperature, and all the excess moisture has been squeezed out. With mushrooms, if you use fresh, sliced, saute them before you add them to your cheese layers to eliminate the water they hold. Otherwise, your quiche will come out very soggy and probably won't set.
