Easy, Spicy Breakfast

This is my favorite thing to eat for breakfast. It is super easy, very filling, and it makes me feel like I am in Mexico or somewhere exotic! I always make plenty of extra because the best part about it is that my kids love it too!!

1/2 c. egg whites/ egg beaters
1/2 c. low sodium black beans
1/2 c. brown rice/ Rico Brand spanish rice
cholula hot sauce

In a large skillet, cook the eggs then set aside. (I use Egg Beaters because they are 99% egg whites and I like how they taste.) Then put your beans and rice in the skillet and heat untill beans are thouroughly cooked. (I use Rico brand spanish rice because it is made locally in Salt Lake and sold in all the grocery stores, all you have to do is heat it up). Add as much cholula hot sauce as you like and mix it in with the beans and rice. Add your eggs, and enjoy!

NUTRITIONAL CONTENT:
230 calories, 1 gram Fat, 19 grams Protien

19 grams of protein! That's awesome. There's nothing better to rebuild muscle after a hard workout than protein. I'm excited to try it. Good one. And I agree those egg beaters are good.

Okay, 2 things:

1. If Susan eats it - IT'S HEALTHY! You should see how freaking rad she looks these days! She just finished working with a trainer for several months and she is ONE HOT TAMALE! So I'm trying these.

Are you sure I can't use yolks, butter or cheese?????

2. Jennica-Ana would like you to tell Libs hello for her.

Yay, I'm glad you ladies are excited to try it. Make it your own by adding whatever you want. This is just how I like it.
Les- I came up with it on my own after trying to put together all of my trainers reccomendations.
Ray- Give the egg beaters a try. I like them for scrambled eggs. I still use eggs with yolks when I just have to have fried eggs, but the yolks are just way too high in cholesterol.

Okay, I need more information than that. So high cholesterol is not bad? I'm confused. This is why it is so hard to be healthy, there is so many opposing ideas. Tell me more....

i'll let you borrow the book. it basically says that you should eat food the way nature/god gave it to you. makes sense.

it also says that eggs are one of the most perfect foods there is and that you should eat them everyday. yolk & all. she makes a point that eating cholesterol doesn't put cholesterol in your arteries. if you think about it the cholesterol goes through your digestive system which is separate from your veinous system which is where the cholesterol builds up. this doctor claims, and explains scientifically, that eating too many unhealthy carbs and sugar with UNHEALTHY fats is what screws you up. note-there are many healthy fats-nuts, eggs, olive oil, etc and she says eat them at every meal to keep your hormones in check.

phew that was a mouthful. i love the book. it makes so much scientific sense. i need to do better about implementing it, which is exactly why i wanted to start collecting recipes...PORN ON!!

Well I'm excited to eat real eggs again! And I love the fact that shrimp and crab are high in cholesterol, but I don't need to worry about that either. I like the sound of that!!!! Bring me that book when we meet at the gym, I would love to read it!
