
Fall is here and so is my annual pumpkin craving. I have been searching for a good muffin recipie that is not going to make me feel like I just gained 5 lbs. Well, I found one! I tried them out tonight and they turned out really good so I thought I would share.
2 c. Whole Wheat Flour
2 tsp. Baking Powder
1 tsp. Baking Soda
2 tsp. Cinnamon
2 tsp. Nutmeg
2 Eggs
1 c. Pumpkin
1/4 c. White Sugar
2 c. Applesauce
2 Tbs. Vegetable Oil
1 tsp. Almond Extract
Pre heat oven to 350. Mix flour, baking soda, cinnamon, nutmeg. In large bowl mix eggs, pumpkin, sugar, applesauce, oil, almond. Slowly mix in flour mixture. Bake at 350 for 15-20 min.
I added 1 cup of chocolate chips because I am a total choco-holic. I'm sure that will add a few more calories, but I have to get my fix somehow! Another thing you can do is to add 1 cup protein powder and 1 more egg for a few extra grams of protein per serving.

DUDE! I'm all over these. I am committed to make some pumpkin chocolate chip cookies tomorrow, but after that -- muffins!!
P.S. Roberta/Heather I used Sandy Knighton's recipe from the Cresthaven cookbook, but substitute applesauce for half the butter (they are actually tastier this way) and if it calls for cloves I omit those (gross). They are divine!
Lovely recipe Suz! I have been going overboard with the pumpkin lately! I can't get enough. I just made a huge batch of Pumpkin Chocolate chip loaves. I altered the recipe to reduce the sugar and oil too. It was divine. Will be sure to make these muffins pronto.
And I am with you, gotta have the chocolate chips, otherwise not worth it!
