
Why do I suddenly have "I would do anything for love but I won't do that" running through my head? It's a mystery.
Anyway, tonight was payback time for me. I finally got brave enough to make a meal for my culinary king neighbors. I was nervous, but it turned out great and everyone was pleased. All 6 children cleaned their plates and seemed to love the meal. I've shared the recipe on my blog before so I am just going to refer you here to find it. Tonight I used ground turkey breast instead of ground beef and it was still excellent.
With it I served garlic mash (red taters) and my signature salad. It goes like this:
Some romaine
some spinach
diced tomato
diced avocado
olive oil & balsamic vinegar - eyeball it
parmesean cheese
Toss. It's easy, breezy, beautiful.
The meatloaf is really good the next day served on a baguette, smothered with spaghetti sauce and cheese toasted under the broiler. Ohhh, I wish I had leftovers!

yes, i'll admit it. i stole the idea from trader joes. if you are lucky enough to be in the vicinity then try theirs, it's near the pre-made sandwiches and pizza's and it's even better than mine.
Rachel, why do you prefer it in an 8x8 instead of a loaf? I usually make giant meatballs with mine.
i sometimes do meatballs also and serve with pasta, but to learn why i use the 8x8 you will have to read the footnote on the recipe itself. it's an association thing.
rach-i'm sure yours is better than trader joe's. it's fresh after all and YOU made it.

Is Jeff really in the closet? I have distict and haunting memories of him rocking out shamelessly to Meatloaf in my adolescence.
And how trippy that you posted this at this time. Last night I was trying to decide what to make with ground beef, and I decided on meatloaf, which I hardly ever make. I was ALMOST going to call you to get your "italian meatloaf" recipe, I have heard your raves. But I bypassed you and went for an invention of my own. Sounds like it is a hit. Will definately try next time!
P.S. I saw you and Jaren making "meatloaf" references on his blog, it all makes better sense now.
les, i used this recipe in the cookbook last year. hey, we should tell all our pornstar friends about the cookbook. it's like my favorite christmas present of all time.
I make a pretty wicked meatloaf - but I'm going to give this a try - especially with the ground turkey! Sounds really great. Thanks for sharing
