GRILLED STEAK AND VEGGIES


I hope this isn't confusing but I never use recipes so I will explain the best way possible. I buy the thinnest steaks I can find for two reasons, portion control and quick cooking. Preheat grill to medium-high. Cut veggies into thick slices. I used red, yellow and green peppers as well as purple onion and zucchini. Brush veggies and steak with olive oil and season to taste with kosher salt, grill seasoning and McCormick salad supreme (found in the spice aisle) and then grill. Put veggies on first and after about ten minutes turn them over and put the steaks on. The steaks only take a couple minutes on each side and it's easy to over-cook them when they are so thin but the veggies are impossible to mess up. Even if they get black they still taste awesome. So fresh and flavorful! I like the veggies to still be a little crunchy so the high heat works great to soften the edges but still leave the crunch. Ask Lynne, she tried this at my house last night and then bought everything to try it at her place. My kids love the steak and zucchini. Portabello mushrooms and asparagus are good and I think you could even throw cherry tomatoes on there for a minute. (The sky is the limit but salad supreme and grill seasoning are my best friends right now.)I also slather garlic butter on sourdough bread and grill it up for a couple of minutes to serve with this and it's so good but not especially healthful. The steak and veggies should be really healthy though.

This is my MOST FAVORITE meal in the world . . . we generally do it with chicken but the viggies are to DIE FOR - it's absolutely heaven food. Nice picture.
