Actually, the reason I am posting this is that Magan saw this recipe card in my cookbook, and she asked me to post it because she was dying to try them. I KNOW you will enjoy! And the kids LOVE them!
Pumpkin Waffles
Mix dry ingredients together in medium bowl:
1 1/2 cup flour
1/4 cup packed brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
In a seperate bowl, mix the wet ingredients:
1 egg
1 1/4 cup milk
1/2 cup canned pumpkin
2 T. vegetable oil
Combine both mixtures together and cook on a waffle iron.
I usually double this recipe and store the left over waffles in the fridge, so we can enjoy them for a couple more meals. I also measure out the extra pumpkin and put it in small tupperware containers and freeze it so that when we get the craving for waffles, I can just take it out and defrost it. Nothing wasted.

they ARE delicious! i sorta forgot about them. they aren't super pumpkiny, and they don't get crispy like some waffles do, but they are really yummy.
i don't buy syrup (like the mrs. butterworth's kind). i only use real maple syrup (expensive, but i hate all the refined sugar that goes into the fake stuff). here is a tip to make it go further and cost less: i mix some real maple syrup with plain yogurt. that way you get the maple flavor without all the calories. throw some toasted pecan pieces on top and VIOLA-perfection!
No, this does not have a heavy pumpkin flavor. It's very mild. I sometimes add a little extra pumpkin to make them even more moist and more flavorful.
