Apple Fritters

It is a drizzly, rainy, California autumn day and these are sounding pretty good for an after school snack! They are delicious, and the kids love to participate in making them. The recipe is actually from Rhodes. Also good for FHE.

20 Rhodes dinner rolls, thawed and partially risen
3 apples (Granny Smith, Fuji, I use a combination of both), peeled and diced
1/2 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
1 egg, beaten
oil for deep frying

Glaze:

1 cup powdered sugar
1/3 cup milk or half and half

I use an electric skillet and preheat to 350* with enough oil to barely float a 5-6 inch fritter.

Combine apples, sugar, cinnamon, nutmeg in a bowl. This mixture will draw some of the juice of the apples out, so put it in a colander over another bowl because you don't want the juice to drip out of your fritter. It will splatter all over!

Spray counter lightly with Pam. Roll each of 2 rolls into a 5-6" circle. (Sometimes I just let Chris and her friends pull them gently like we would for a scone.) Brush one with the beaten egg. Sprinkle with 2-3 Tablespoons of the apple mixture. Do not put it all the way out to the edges. Cover with the other circle and seal the two edges together. Press together several times for a good seal. Fry until it is a deep golden brown on both sides. Place on a wire rack over a cookie sheet with some paper towels to drain.

Repeat with the remaining dough.

Whish together the powdered sugar and milk. Brush it over the fritters. You can enjoy these warm, or wait until they have cooled and the glaze is set.
