Quick Tortilla Pizza

(Submitted by Berta)

Okay, hopefully this will 'redeem' me after my last post! I just started making these. Got the idea from a friend and they're quick and easy - anytime!
I'm going to post (soon) a really fun and yummy pizza (kid-size) the kids and adults will love - very tasty and easy to do.

1 tortilla (perferably whole wheat)
1 tbsp tomato paste (I like premade pizza sauce in can or jar)
Garlic Powder
Onion Powder
Oregano Basil
Pepper
Diced peppers
4 slices of turkey pepperoni
1 oz mozzarella cheese

Preheat oven to 425 degrees. Smear the tomato paste on the tortilla. Sprinkle with spices, add peppers and pepperoni, top with cheese and bake for about 10 minutes.

That’s it! Oh! and if you have a pizza stone they come out super crispy!

UPDATE: if you want a crispier crust, put the tortilla in the preheated oven for a few minutes to get crisp. Remove and add your toppings!

I like the look of this templet much better. After you said, "cupcakes" Rach . . .I thought that maybe they would look good with the other design so I put them together and . . .I like it! Let me know if it's too big your your computer screen! Leslie, oh yeaaaaaah, I have lots of time on my hands! . . . I actually got a digital scrapbooking program and whipped it up in about 10 minutes! What a life-saver . . . let me know if it's too 'hippy'!?!?

these pizzas are yummy on the grill, too. we also use trader joe's pizza dough (although you can use any homemade dough) on the grill. just spread it out, toast for a couple minutes, flip, top, and melt the cheese. soooo good and easy.

please don't talk about trader joe's pizza dough on here. there aren't enough anti-depressants in my house to fix the funk i will go into if i think about that for long. (;_:)
